Christmas in July
Pudding is older than Christmas itself.
Steamed pudding has evolved over the centuries. Let’s start with a gruel made with spices using dried fruit, spices usually added to mutton or beef broth thickened with bread crumbs. Spices and dried fruit helped in the preservation of food in those days. It wasn’t until the 1600s when more ingredients became plentiful. The plum pudding of today evolved from that point to a dessert taste profile. It is a celebration for a Christmas feast. Here is why.
1.       The shape represents the abundant earth
2.       The traditional garnish of holly and holly berries represent the blood of Christ
3.       The Method of flambéing the pudding represents the fires of hell being extinguished and the goodness within prevailing
I found it interesting that this was a common description. I can’t honestly say if it’s true, however, it’s cool to think about.
Recipe ingredients are varied by family, country… The common denominator is the method of cooking. The method is steaming. Gentle heat helps aid in the texture and flavor.
Many of us probably have never had a traditional Christmas pudding. My taste had to mature to appreciate the unique texture and flavor.  I love it now and look forward to it every Christmas.
Not only did my taste mature the pudding if handled properly needs to be aged for weeks, months some say years. That maturity is key I think to the flavor and texture development. It’s a long process. My wife Kathleen along with my brother John and his partner Jack are all chefs. We are crazy enough to give it another try this year.  Yes, it’s Christmas in July!
We will steam our pudding for 8 hours checking the water level as we go then start the aging process using bourbon and rum. I wish we would have made it six months ago but Now till Christmas will have to do.
I realize you may not want to go to all that trouble. I don’t blame you. There are several fine companies that offer tradition puddings online. If you think you are ready, give it a go.
