Football starts this weekend in Louisville. It’s time to make Kentucky Beer Cheese.
Recently someone asked me for the recipe. Kentucky beer cheese is a cheese spread eaten in Kentucky at many pubs, taverns, bars and even fine dining restaurants. Around the world many cultures have used this method to utilize leftover bits of cheese. Mix up some good ingredients and share it.
I am a Kentuckian and I love it with some snack crackers and bread & butter pickles. The hotter the  beer cheese the better for me. The pickle is like an intermezzo between painful bites. Some like it as a spread, some like a dip. I like it as a spread. You can adjust your ingredients to achieve the consistency you prefer.
 
The recipe here is not as hot as I like it but resembles many made in Kentucky. Custom make your own beer cheese. That’s how we do in the Commonwealth of Beer Cheese.  It’s good.
