Brian's Mac & Cheese Recipe


Ingredients
By Measure
1/4 Cup Bacon Fat
1 Large Yellow Onion
1 1/2 Ribs Celery
2 Bay Leaves
1 Quart Whole Milk
3 Quarts Cream
1 tsp Nutmeg
3 lbs Pasta
4 lbs White Cheddar
TT Salt & Pepper

 
 
Preparation

  1. Mince the onion and celery
  2. Heat the bacon fat in a large pot and add the onions, celery and bay leaves
  3. Cook until soft then add the milk, cream and nutmeg
  4. Bring to a simmer and add enough salt and pepper so that you could eat the sauce by itself (this will insure that you have enough salt and pepper to season the pasta)
  5. Add the pasta and simmer until cooked through
  6. Stir in the cheese and season if needed
