Crab Cakes Recipe

Ingredients for crab cakes
1 pound crab meat, picked free of shells
1 tablespoon unsalted butter
1/2 cup leek, diced small
1/2 cup Spanish onion, diced small
1/4 cup red bell pepper, diced small
1/4 cup mayonnaise
1/2 teaspoon old bay seasoning
1/2 teaspoon dry mustard
1/2 lemon, juiced
1/3 cup saltine soda crackers, crushed

Ingredients for cooking crab cakes
Flour for dredging or panko bread crumbs
1/2 cup canola oil for cooking
 
Preparation

  1. In a skillet at medium heat add the butter. When the butter is hot add the leeks and onions. Gently sweat the leeks and onions until soft and fully cooked.
  2. Combine all of the ingredients for the crab cakes, plus the leek and onion mixture after it has cooled enough to handle. Gently mix together to distribute the flavors. Be careful not to over mix the crab.
  3. Form the crab mixture into cakes. If the mixture seems a little dry add a small amount of mayonnaise. If the mixture is a little wet add a little more crushed saltines. Different amounts of moisture packed with the crab is the variable. Dredge each cake in flour or panko bread crumbs.
  4. Heat the oil to medium heat then brown the cakes on each side in batches. This should take 5-7 minutes. Serve with your favorite sauce
