Zucchini Bread Recipe


Ingredients

1/4 Cup Butter:Melted
1/4 Cup Vegetable Oil
1 Cup Brown Sugar
1 1/2 Cups Flour: AP
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt
1 Eggs
1 Cup Zucchini
1/2 Cup Buttermilk: If Needed
1/2 Cup Walnuts: Optional
 
Preparation

  1. Preheat oven to 350 degrees
  2. Shred the zucchini
  3. Combine butter, oil and sugar and mix until smooth
  4. Add the egg and mix until incorporated
  5. Sift the flour, baking soda, baking powder and salt
  6. Add sifted ingredients to creamed mixture a little at a time until it is all incorporated and the batter is smooth
  7. If batter is too stiff, add buttermilk to bring to a cake batter consistency
  8. Squeeze excess water from zucchini and fold into batter along with walnuts if using
  9. Bake for 1 hour or until a toothpick inserted in the center comes out clean
