Poached or Fried Egg Breakfast Sandwich Recipe

For The Toast:
4 Pieces Texas Toast, Brushed with Melted Butter
1 ¼ Cups Sour Cream
4 Sausage Patties, Cooked and Diced
½ Cup Cheddar Cheese, Shredded
¼ Cup Parmesan Cheese, Shredded
2 Tbs Basil, Chopped
2 Tbs Chives, Chopped
Salt and Pepper, To Taste
For The Sauce:
2 Tbs Onion, Diced
1 Cup Heavy Cream
2 Tbs Ketchup
2 tsp Tarragon, Chopped
2 tsp Parsley, Chopped
Zest of ½ a Lemon
Dash of Tabasco®
Salt and Pepper, To Taste


For The Toast:
  1. Combine all ingredients, except the bread.
  2. Divide the mixture into 4 then spread onto bread
  3. Bake at 400 degrees until edges are toasty
For The Sauce:
  1. Saute the onions over medium heat until translucent
  2. Add the cream and ketchup and simmer until thickened to sauce consistency
  3. Turn off the heat and add the tarragon, parsley, lemon zest and Tabasco®
  4. Season with salt and pepper
Top the toast with a poached or fried egg. Sauce and serve.
